Burgundy
This Bourgogne Chardonnay is sourced from vineyards with fossiliferous Bajocian Limestone soil, farmed organically with biodynamic methods. The grapes are gently pressed over six hours, and the fermentation is initiated by ambient yeasts, often with a pied de cuve. The wine then ages for 12 months in used oak barrels of varying sizes, typically 228L to 600L. Minimal intervention is practiced in the cellar, including no fining and only occasional light filtration.
